To cook sushi rice for an obento (lunchbox), first rinse the rice thoroughly to remove excess starch, then combine it with water in a pot. Bring it to a boil, then reduce the heat and simmer until the water is absorbed. Finally, let it sit covered for a few minutes before fluffing and seasoning with a sushi vinegar mixture.
