Longdan's Northern Vietnam Special Rice Noodle, also known as "mi chu," is a versatile type of rice noodle that can be enjoyed in various dishes. To prepare it for stir-fries, soak the noodles in warm water (around 50°C or 122°F) for 10-12 minutes until they become pliable. For soups or hot pots, cook the noodles in boiling water for a shorter duration, about 2-3 minutes, until tender. Rinse with cold water after cooking and let them dry for 15 minutes before using.
