Native to Thailand, kaffir lime is a key ingredient in Thai cooking, offering an amazing aroma and distinctive taste. Both the fruit and its leaves are used extensively in Thai cuisine. The leaves have a zesty, citrus flavour, which is particularly important in soups and curries. Kaffir lime leaves are often added whole to broths and removed before serving to infuse dishes with a fresh, bright flavour.

Kaffir lime leaves can be added whole (with the central vein removed) or in pieces to soups, curries, stews, or other dishes. 
To prepare kaffir lime leaves, you can "bruise" or crush them to release their aroma before adding them to a dish. Fresh leaves can be twisted to create small cuts or shredded/chopped into strips. Frozen leaves should be defrosted and gently muddled before use.

Fresh kaffir lime leaves can be stored in the refrigerator for a week or two by placing them in a plastic bag or container lined with paper towels to absorb excess moisture. For longer storage, they can be frozen, either whole or chopped, in a freezer-safe bag or container. Freezing can preserve them for several months.

Refrigeration:
Remove leaves from stems, wash, and dry them thoroughly.
Line a container with paper towels to absorb moisture.
Place the leaves in the container, adding another layer of paper towels on top.
Store in the refrigerator's vegetable crisper drawer.
Freezing:
Wash and dry the leaves thoroughly.
Remove as much air as possible from a freezer bag or container before sealing.
Freezing whole leaves is an option, but they can also be chopped before freezing.
Frozen leaves may become darker and softer, but their flavor will be preserved.
Tips for Optimal Storage:
Air Exposure: Minimize air exposure to prevent freezer burn and maintain quality.
Freezing Whole: Freezing whole leaves allows for easy removal of individual leaves when needed.
