The rest of the world remembers Tom Yum for its savoury, sour and spicy broth. The broth is made of tamarind, fish sauce, lime juice, galangal, lime leaves, shallots and lemon grass. Crushed chilies are added to the broth giving it its deep orange colour and spicy taste. What makes Tom Yum so special is the generous amount of herbs necessary to create the broth. Traditionally, the soup is topped with fresh coriander leaves. Oyster or straw mushrooms, or a combination of both, are added on to the recipe. All these flavours are captured by Mama’s Instant Noodle (Tom Yum).

Other variations include Yom Yum Goong or soup with shrimps or prawns, Tom Yum Pla or soup with fish, Tom Yum Talay or soup with mixed seafood and Tom Yum Khon in which coconut milk is added to the broth.
