The Thai Aubergine, or eggplant as it is sometimes known, is a variety of the Kermit eggplant and comes in a variety of different colours. The round white or green ones are used in Thai cuisine and are approximately the size of a golf ball, while there are also Thai Purple and Thai Yellow. Thai eggplant is known as mak heua yaow and it is an essential ingredient in many curry dishes. When making a red or green curry, the eggplant is cut into quarters and cooked in the curry sauce. They become soft and absorb the sauce and its flavour.
