Rambutan, or Ngok in Thai, is one of the most intriguing looking fruits to be found anywhere around the globe. At first sight many people would mistakenly thing that the Rambutan is inedible, just because it looks entirely alien as a fruit. Nothing could be further from the truth, between July and September this delicious fruit can be found in every market, and truck loads are sold at the roadside straight from harvest. If you are in Thailand during this time, then you just have to try them. Thai people flock to buy this fruit whilst it is in season, and the reason is simple, it just tastes so good.

Description

Fresh rambutans are best stored in the refrigerator, but can also be kept at room temperature for a short time. To maximize their freshness, store them unpeeled in a perforated plastic bag or container to allow for some airflow and prevent them from becoming too moist. For longer storage, rambutans can be frozen, either peeled or whole, but freezing can affect the texture.
1. At Room Temperature:
Rambutans can be stored at room temperature for a few days, especially if you plan to eat them soon.
Keep them in a fruit bowl away from direct sunlight.
However, they will lose their aroma and freshness faster at room temperature than when refrigerated.
2. In the Refrigerator:
Unpeeled: Store unpeeled rambutans in a perforated plastic bag or a container with ventilation holes in the refrigerator to maintain humidity and prevent moisture loss.
Up to Two Weeks: This method can keep rambutans fresh for up to two weeks.
Separate Ripe and Unripe: If you have a mix of ripe and unripe rambutans, it's best to separate them, consuming the ripe ones first and allowing the unripe ones to ripen further in the refrigerator.
3. Freezing:
Peeled or Whole: Rambutans can be frozen, either peeled or whole, but freezing can affect the texture.
Airtight Container: Store frozen rambutans in an airtight container or zip-top bag.
Up to Six Months: Rambutans can be frozen for up to six months.
Texture Change: Be aware that freezing can make the flesh slightly softer or mushier. If you plan to use frozen rambutans in smoothies or desserts, this may not be a problem.
4. Important Considerations:
Moisture: Keep rambutans as dry as possible to prevent mold growth.
Ripeness: Rambutans do not continue to ripen after picking, so choose them when they are fully ripe.
Visual Changes: Be aware that the skin and spines of rambutans may change color during storage, but this doesn't necessarily indicate spoilage of the flesh.
Eating: Peel the rambutans just before eating, as they are best enjoyed fresh.
