Taste and smell
Sand ginger has a strong peppery taste and smell with a camphorous undertone. Some say it smells like a medicinal white pepper or peppery, salty 7-Up.
Sand ginger has only recently become known in Western kitchens, but it has been part of Southeast Asian cuisine and traditional medicine for centuries.

It’s been used to treat a range of ailments including fatigue, cough, and muscle injury. Perhaps this is why the purple and white flowers that bloom from the root are sometimes called “resurrection lilies.” We like to think the name stems from the spice’s power to bring a dish to life!

Sand ginger is also known as lesser galangal, canker, aromatic ginger, or kencur. Its scientific name is Kaempferia galanga.
