Aoyama sushi ginger has a mild, sweet-sharp flavour and a pale pink colour from natural food colouring. In Japan, sushi ginger is known as gari and is traditionally enjoyed as a palate cleanser when eating sushi and sashimi. The sweet vinegar flavour of the pickled ginger is said to stimulate the appetite and refresh your taste buds.

Sushi ginger can be added to stir-fries and noodle salads or as a garnish for bento boxes and katsu curries. The bright acidity of the pickled ginger also works well with rich, slow-cooked meat dishes.
