
Brilliant Thai Red Curry Fried Chicken Wings

Thai Red Curry Deep Fried Chicken Wings
These Thai Red Curry Chicken Wings are perfectly crispy, have just the right amount of subtle sweet heat, and they are so easy to make.
Ingredients
- 1Kilo chicken wings
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 2 and 1/2 tablespoons corn starch
- 2 tablespoons water
- Vegetable Oil for frying
For Curry Wing Sauce
- 1 and 1/2 Thai Red Curry Paste (See note below)
- 6 cloves garlic
- 1 teaspoon chilli flakes
- 2 teaspoons sugar
- 1 tablespoon oyster sauce
- 2 teaspoons fish sauce
How to Prepare
- Prepare your chicken wings by washing them thoroughly ( I tend to cut the wing tips off)
- Place the wings in a large bowl
- Add the salt, white pepper and really give them a good massage
- add the Corn Starch and and again give them a good massage with your hands and the water slowly as you want to make a watery batter (Like a single cream thickness)
- Heat your oil to a high heat
- Add some of the chicken wing s(do not overcrowd the pan) leave them for around 60 seconds then turn the heat down to medium and gently move the wings around the pan to prevent them sticking together.
- When they are golden brown remove and drain them on some kitchen roll.
- Continue with the rest of the wings.
Prepare the Thai Red Curry Sauce
- Finely chop the garlic
- Heat your wok on a high heat and add a couple of teaspoons of vegetable oil
- Add the chopped garlic and turn the heat down to a medium level
- Add the Thai Red Curry Paste and stir well to combine ( You may consider using less paste then add more according to your personnel spice level.
- Add the chilli flakes, then the oyster sauce and mix well
- Add the remaining ingredients and stir fry for around 60 seconds ( don't forget to taste the sauce and add more sugar and fish sauce to taste) you want it to be sweet, salty and a hint of heat.
- Add the chicken wing and mix thoroughly until the wings have a nice coating.
- Remove the wings and plate, serve with a garnish of chopped coriander and sliced spring onions.
