The rest of the world remembers Tom Yum for its savoury, sour and spicy broth. The broth is made of tamarind, fish sauce, lime juice, galangal, lime leaves, shallots and lemon grass. Crushed chilies are added to the broth giving it its deep orange colour and spicy taste. What makes Tom Yum so special is the generous amount of herbs necessary to create the broth. Traditionally, the soup is topped with fresh coriander leaves. Oyster or straw mushrooms, or a combination of both, are added on to the recipe.
